Rinse cucumber, cut in half, remove seeds. Clean and rinse carrots. Cut cucumber and carrots into sticks about 4 cm long. Coarsely chop cashews.
Peel and dice onion and garlic. Blend with sambal ölek, turmeric and cashews using the high-speed hand blender. Heat the oil in a saucepan on 2 1/2 or automatic heat 8 to 9, sauté the spice puree in it. Add the carrots and sauté. Add 100 ml water and the cucumber and cook for another 10 to 12 min on 1 or automatic heat 4 to 5. Season with salt, sugar and vinegar.
