For the mulled wine speculoos muffins crumble speculoos. To do this, place the cookies in a freezer bag and roll over them with a rolling pin or knock the bag against a solid plate.
Sift baking powder and flour and mix with the speculaas crumbs and cocoa.
Cream the sugar and butter, beat in the eggs one at a time and add the vanilla, cloves, mulled wine and rum and mix.
Finally, fold in the flour mixture.
Line a muffin tin with muffin paper cups and fill with the mixture two-thirds full.
Bake the mulled wine and speculaas muffins in a preheated oven at 190° C for about 20 minutes.
