Preheat electric oven to 200°C. Pat mozzarella dry and cut into slices. Cut panini rolls in half crosswise and bake in oven (electric and natural gas oven 200°C/level 4, convection oven 180°C) until crispy. Drizzle the cut surfaces with herb oil and sprinkle with salt and pepper. Cover the bottom half of the roll with mozzarella and antipasti, sprinkle with herbs, cover the top half of the roll and bake briefly in the oven until the mozzarella has melted a little. Serve the panini warm, garnished with fresh herbs if desired.
