Instructions:

For the fried hake fillet on wild garlic mashed potatoes, peel, wash and chop the potatoes. Put the potato pieces in a saucepan, cover with cold water and cook until done.

Meanwhile, boil milk with salt, pepper, nutmeg and butter. Carefully wash the wild garlic, toss to dry, chop and add. Finely mash the wild garlic-milk mixture.

Drain the potatoes. Return pot with potatoes briefly to the off heat and allow all liquid that may be in the pot to evaporate.

Mash potatoes, adding hot wild garlic milk repeatedly until the consistency of the mashed potatoes is to your personal taste. Whisk potato mixture until smooth, seasoning again if necessary.

Rinse hake fillet with cold water, pat dry, cut into 4 equal pieces. Salt, pepper and dust with flour. Heat sunflower oil in a pan. Fry fish over medium heat until golden brown, about 4 minutes.

Remove pan from heat, add a teaspoon of butter. Carefully turn hake fillets, cook in another 1-2 minutes. Spread wild garlic mashed potatoes on 2 plates.

Arrange hake fillets on top, drizzle with lemon juice and garnish with wild garlic and organic lemon slices.

Preparation Tip:

Fried hake fillet on wild garlic mashed potatoes goes well with various salads, braised vegetables and carrot chips. Do not puree the wild garlic mashed potatoes with a hand blender, otherwise the mashed potatoes will become tough.
