Shake out the elderflowers well and mix with water, citric acid, sliced lemons and oranges and stir gently with a wooden spoon. The flowers should then be completely covered with water. Cover with a tea towel and let stand for 24 hours.
Then strain through a fine sieve or possibly a linen cloth. Add the honey, or sugar as an alternative, and stir.
Slowly bring the elderberry juice to a boil and thicken slightly. Then pour the hot juice into clean bottles using a funnel and seal immediately. Do not fill to the very top, but leave about 5 cm free.
Boil down the syrup at 75 °C for 20 minutes.
Preparation Tip:
This syrup refreshes diluted with water, but also tastes good with sparkling wine or white spritzer and is known as "Hugo". I enjoy the syrup with a light mineral water without much inherent flavor.
