Bruschetta with Feta and Peppers

Crumble the feta cheese into small pieces or mash with a fork.

Wash the bell pepper, remove the stalk and seeds and cut into very small cubes.

Mix with the cheese and a dash of olive oil, flavor with a little juice and zest of half a lemon.

Drizzle the bread with olive oil and toast briefly in the oven under the broiler, turning and browning the other side as well.

Top with the cheese and bell pepper mixture.

Serve bruschette peppered with colored coarse pepper to taste!
