For the sheet cake, knead a smooth yeast dough from the ingredients for the yeast dough in a food processor. Cover and let rise for 1 hour.
In the meantime, wash the plums, cut them in half and remove the stones. Knead the yeast dough again and roll it out on a prepared baking sheet.
Spread the plums, skin side down, in a fan shape on the bottom. Prepare the crumble from flour, sugar, butter, egg yolk and cinnamon and spread it over the plums.
Bake the sheet cake in a preheated oven at 190 °C for about 40 minutes. Remove the cake and let it cool on a cooling rack.
