For the goat cheese salad, press the goat cheese through a potato ricer. Clean and wash the lettuce and shred into bite-sized pieces.
Mix nut oil, balsamic vinegar, vanilla sugar and pepper to make a dressing and marinate the lettuce.
Place goat cheese in the center of a plate and scatter lettuce leaves all around. Drizzle grappa over the goat cheese salad and grate truffle over the top.
