For the strawberry panna cotta, mix whipped cream with sugar, the pulp of 1 vanilla bean and strawberry pulp, soak gelatin in cold water, squeeze out, dissolve in a little of the whipped cream mixture and stir into the remaining mixture.
Pour into a mold or glass in layers. Whipped topping mixture, strawberries, mixture, strawberry puree, mixture, etc. Chill and decorate the strawberry panna cotta with mint or lemon balm before serving.
