Mix all ingredients for the marinade in a shallow baking dish. Pour in the salmon fillet and cover both sides with the marinade. Leave to cool for at least 2 hours. Lift the fish out of the marinade and dry with kitchen paper.
Dust the fish with the ground star anise. Heat a cast iron grill pan and brown the fish on both sides and bring to the table.
