For the apple compote, core the apples and cut the apple flesh into cubes. Simmer together with the remaining ingredients for about 10 minutes, puree as desired or leave with chunks.
Pour the ice cream scoops into a glass or bowl, arrange the apple compote on top and garnish with the syrup.
Serve at the same time so that the ice cream does not melt.
