For a glass of 1 liter:

















Instructions:

Finely grated ginger, grated anise, cloves, orange peel, cardamom, new spice and sugar with honey, orange liqueur and water boil at low temperature to a third syrupy.

In the meantime, peel the oranges like apples (remove white skin completely !) and cut into slices. Pierce kumquats evenly all around with a wooden stick.

Layer kumquats and orange slices in the glass, insert tarragon between glass wall and fruit. Pour the hot syrup over the fruit, close the jar on the spot and leave to infuse for a week (then keep for another 2 weeks).

Serve (hot or possibly ice cold) with: Mousses, poultry dishes, souffles
