Bring the coconut milk to the boil. Add the galangal root cut into fine strips, as well as the lower, crushed half of the lemongrass. Add shrimp and season with fish sauce.

Add kaffir lime leaves and crushed chilies and simmer on low heat for 5 min. Season with the lime juice.

Before serving, remove the galangal, lemongrass and lime leaves and sprinkle the finely chopped coriander leaves on top.

Drink with this: China jasmine tea, or sauvignon blanc.
