For the kale and mushroom salad, first whisk together all ingredients in a bowl for the vinaigrette.
Pluck the kale from the stems and place in a bowl. Mix with some of the vinaigrette, add salt and pepper and let sit for about 5 minutes. Finely shave mushrooms and gently fold into kale.
Serve the kale and mushroom salad immediately.
