For the wild garlic dressing, rinse the wild garlic leaves with cold water, spin dry and chop coarsely. Place in a high bowl with the oil and puree with a hand blender. Finely chop the garlic, add to the wild garlic oil and puree again. Now add the remaining ingredients and mix well.

The wild garlic dressing is excellent for marinating leaf salads or potato salad.
