For the strawberry champagne jam, wash the strawberries, drain, hull and finely chop. Weigh out 750 g.
Place strawberries and sparkling wine in a saucepan and mix well with sugar and gelatin. Bring to the boil, stirring constantly, and simmer for at least 5 minutes. Stir well. Test the jelly.
Pour the strawberry sparkling wine jam into prepared glasses while still hot.
