For the poultry sandwich roll, remove the crusts from the whole wheat toast and roll out the slices thinly with a rolling pin.

Wash, sort and clean the arugula and finely chop some leaves. Mix curd cheese, finely chopped arugula leaves and herbs and season with 1 pinch of sugar, salt and pepper.

Spread slices of toast with the curd cream. Wash, clean and quarter the cucumber. Cut each quarter into thin slices.

Spread remaining arugula, turkey breast and cucumber slices on top of curd cream. Roll up toast slices tightly, fix with wooden skewers and enjoy the poultry sandwich roll for example with carrot sticks or cherry tomatoes as a side dish.

Preparation Tip:

If arugula is too spicy for you, you can also substitute it with voger lettuce in the poultry sandwich roll.
