Peel onions and garlic, dice very finely. Chop capers. Rinse tomatoes, rub dry and cut into slices about 1/2 cm thick, cut slices in half lengthwise. Drain cheese, also cut slices about 1/2 cm thick, cut in half lengthwise.

Knead capers, onion, garlic, cream fraiche, yolk and lemon peel into minced meat, season with salt, pepper and cayenne.

Form thick meat loafs with wet hands and fry in hot oil for about 4 minutes on each side until golden brown. After turning, top half of the meat loaves alternately with half of the tomato slices and half of the mozzarella slices. Finish frying all the meat loaves. Decorate with washed basil and serve with baguette.
