A great pasta dish for any occasion:

Soak legumes such as peas, thick chickpeas, beans, lentils in lukewarm water for one night.

Cut onion into fine slices. Sauté in hot olive oil. Add legumes and pour instant clear soup.

Make penne al dente. Cut celery stalk into pieces and savoy cabbage into narrow strips.

Cut carrots into small cubes and mushrooms into narrow slices. With the carrots add 5 tbsp. olive oil to the vegetables form. Cover the pot and cook at low temperature for about 90 minutes.

Add the mushrooms 10 min before the end of the cooking time.

Add the penne to the saucepan, let it boil briefly one more time, season with salt and freshly ground white pepper. Add 3 tablespoons of olive oil. Sprinkle with grated pecorino. Serve immediately.

For a change, a red wine from Calabria: Pollino rosso.
