For the Gervais tomatoes, cut the top third of the tomatoes and hollow them out.
Mix the Gervais, cream and spices until smooth and fill into the tomatoes with a piping bag. Then sprinkle with chopped ham and chives and put the cap back on.
Put the finished Gervais tomatoes in the refrigerator and then serve chilled.
