For the egg dumplings, mix flour, two eggs and milk to a soft dumpling dough. Let the dough swell for about half an hour, it will become even firmer.

Boil water with salt in a large pot, cut dumplings out of the dough with a teaspoon and put them into the boiling water.

When you have used up about half of the dough, remove the dumplings with a sieve ladle, rinse in cold water and prepare the second half of the dough in exactly the same way.

Heat the oil in a large frying pan, add the dumplings and beat the eggs over them. Turn heat to minimum, stir, cover and wait 3 minutes. Stir again, add salt and pepper and serve.

Preparation Tip:

The egg gnocchi get a delicious touch refined with chive rolls.
