For the cheese-fish casserole, wash and dry the fish, sprinkle with lemon juice, salt and cut into cubes.

Prepare a light roux from the butter and flour, add the milk, add the cheese and soup, mix well. Season the sauce with salt and lemon juice and add the yolk.
