Bring the milk to the boil with half the vanilla pod. Melt 20 g of butter. Mix in flour and immediately add the hot milk (without vanilla pod). Add sugar and stir heartily until boiling. Remove from heat. Stir in egg yolks and remaining butter. Then add the candied fruit pafueméed with golden water. Whip egg whites to stiff peaks. Fold in loosely. Butter the gratin dish. Sprinkle lightly with sugar. Pour in the quantity. The dish should be three quarters full. Put into the water bath and then into the stove.
