For the aspic shrimp on toast, soak gelatin in warm water, squeeze out and dissolve in warmed fish stock while stirring.

Peel and crush garlic and stir in together with plucked fennel greens and chervil. Add salt and pepper.

Place shrimp in bowls and pour liquid over them. Place in refrigerator and allow to set. Wash cucumber and cut into strips.

Toast bread, turn shrimp mixture onto it and garnish with cucumber strips and dill. Serve the aspic shrimp on toast.
