For the apricot curry, cut the meat into strips and sear in a hot pan with a little oil. Then sprinkle with plenty of curry powder.

Peel and coarsely chop the onions. Add to the pan and sauté until translucent.

Drain the apricots and add the juice to the meat. Add vegetable soup, depending on the amount of sauce you want.

Let everything simmer slightly. Cut apricot halves again and add to pan. Add sugar and curry paste.

Season the curry again with salt and pepper and thicken with cornstarch if necessary.

Serve with basmati rice or fresh baguette.

Preparation Tip:

A well chilled Hefeweißbier tastes good with the apricot curry.
